Banana & Date Bread

- Preparation Time: 15 minutes
- Cooking Time: 50 minutes

Ingredients:
- Non-stick cooking spray
- ⅓ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- ½ teaspoon ground nutmeg
- ⅓ cup extra-virgin olive oil
- ½ cup Manuka honey
- 2 eggs
- 3 extra-ripe bananas, peeled and mashed
- 2 tablespoons plain Greek yogurt
- ¼ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- ½ cup dates, pitted and chopped
- ⅓ cup walnuts, chopped
Directions:
- 1.Preheat your oven to 325 °F.
- 2.Lightly grease a 9×5-inch loaf pan with cooking spray.
- 3.In a bowl, mix together the flour, baking soda and spices.
- 4.In another large bowl, add the oil and honey and beat well.
- 5.Add the eggs and beat until well combined.
- 6.Add the bananas, almond milk, yogurt and vanilla extract and beat until well combined.
- 7.Add the flour mixture and mix until just combined.
- 8. Fold in the dates and walnuts.
- 9.Place the mixture into the prepared loaf pan evenly.
- 10.Bake for approximately 50 minutes or until a toothpick inserted in the center comes out clean.
- 11.Remove the loaf pan from oven and place onto a wire rack to cool for at least 10-15 minutes.
- 12.Carefully invert the bread onto the rack to cool completely.
- 13.With a sharp knife, cut the bread loaf into desired sized slices and serve.
Dried Fruit Porridge

- Preparation Time: 15 minutes

Ingredients:
- 1 cup old-fashioned rolled oats
- ½ cup quinoa, rinsed
- ½ cup rolled wheat flakes
- ¼ cup chia seeds
- ¼ cup dried apricots, chopped
- 2 tablespoons dried cranberries
- 2 tablespoons raisins
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 7½-8 cups milk
- 4-6 tablespoons Manuka honey
- 2 cups mixed fresh berries
- 6 tablespoons walnuts, chopped
Directions:
- 1.In a saucepan, add oats, quinoa, wheat flakes, chia seeds, dried fruit, cinnamon, salt and milk over medium heat and bring to a boil.
- 2.Adjust the heat to low and simmer, partially covered for about 12-15 minutes or until thickened, stirring occasionally.
- 3.Remove from the heat and set aside, covered for about 5 minutes.
- 4.Uncover and stir in maple syrup.
- 5.Serve with the topping of berries and walnuts.

- 2 tablespoons coffee grounds

- 1.In a small bowl, add honey and coffee and mix well.
